I love brownies, who doesn’t? I’ve been meaning to make some brownies for a while but I wanted to experiment with some other flavours rather than go down the typical chocolate route (although this would be good too). Routing around the cupboard I had a few ingredients I wanted to use up, after some looking around I found this recipe.
These blondies were so moreish, the light brown sugar gave them a lovely caramel taste but the lemon cuts through perfectly. Using Mascarpone gave it a lovely creamy taste, I will definitely be trying to use mascarpone in more recipes. The consistency was more cake rather than your typical gooey texture but still as nice.
I recommend you try this recipe for a lovely twist to a classic.

112g x Melted Butter
200g x Light Brown Sugar
1 x Egg (beaten)
1/4 Teaspoon of Vanilla Extract
226g x Mascarpone
2 x Teaspoons Lemon Zest
2 x Tablespoons Lemon Juice
Pinch of Salt
140g x Plain Flour
1/2 Teaspoon of Baking Powder
1/2 Teaspoon of Baking Soda
Heat the oven to 350°f and grease an 8 x 8 cm baking tin.
Beat together the butter and sugar until smooth, add the beaten egg and vanilla whisk well. Mix in the lemon zest, juice and mascarpone once mixed well add the flour, salt, baking powder and soda and beat thoroughly.
Add to the baking tin and cook for 25 – 30 minutes, it’s baked when an inserted skewer comes out clean. Leave to cool on a cooling rack and then cut into squares once cool.
