This weekend has involved a mammoth baking session, a vintage tea party, a food festival and lots of coffee! Thankfully the weekend came with 2 bank holidays so I had plenty of time to get things done!
I spent last week researching vintage tea parties and what to bake to add to the vintage theme. I wanted something that would accompany a lovely cup of tea without the heaviness of cake (we’ll have plenty of that) I decided to give meringue a try as I’ve not really baked it before, the little meringue kisses went perfectly with our cups of tea and added to the vintage tea party theme.
To add a twist I decided to add some blackberries for a fruity surprise in the meringue.

100g Egg Whites (2 ½ large eggs)
Pinch of salt
100g Caster Sugar
1 teaspoon Vanilla Extract
100g Icing Sugar (Sifted)
Purple Food Colouring
Pack of Blackberries
Heat the oven to 80°c/175°f/Gas Mark ¼ and line 2 baking trays.
Start to beat the egg whites on a high speed, as they start to stiffen add the salt. Once they have started to stiffen add the sugar a little at a time. Keep whisking until stiff and glossy. Add the vanilla extract and icing sugar and bring together using a rubber spatula, add the food colouring and mix together. Put the meringue mix into a piping bag, place the blackberries on the baking trays and then pipe the meringue over the blackberries until they are encased. With any leftover mixture, pipe some smaller meringues in between the larger ones.
Place in the oven for 2-3 hours when they are ready turn off the oven and leave them in until the oven is cooled completely.
