Healthy eating and a baking blog don’t really go hand in hand…but if I’m going to fall off the healthy eating bandwagon for a cake, I’m glad it was with this cake.
Since baking I have been looking for my next excuse to bake again… not good for a girl on a health kick. I’m that obsessed with this cake I’m even thinking about making a healthy version just so I can have it time and time again and not feel horrendously guilty.
2015 began with a much needed cake detox! Each New Year I promise myself this is the year I will be more healthy and aim for a slimmer me. It always starts well but eventually the cake cravings begin and before I know it I’ve reversed all my good work with crazy cake binge and I give up!
This year though started differently, sure i have indulged in a few sweet treats here and there but I always “get back on the wagon” and carry on. I feel so much better for it and I get to ALMOST have my cake and eat it.
My first bake post of 2014 is my Blackberry Daiquiri Cake. Perhaps a little naughty for January as most people (me included) are on a health kick but as Nigella says a little bit of indulgence makes you a better person. I’m pretty sure Nigella would say that anyway…
I actually baked this cake for the last Clandestine Cake Club gathering way back in September, the theme was “Have your cake and drink it”. This was perfect for me and my friend Dawny, over at Infusapalooza, if we’re not talking cake, we’re usually talking drink…..cocktails to be more specific.

The scariest thing about a New Year is commitment! Just before the New Year I have this sudden burst of excitement about what I plan to do with my squeaky clean Year….then work, traffic and general January blues hit and by the 2nd week in I’m over my burst of motivation and have given up!
